Amit Jambotkar

Chief Operating Officer, Mirah Hospitality

With over 28 years in the hospitality industry, Mr. Amit Jambotkar has built his career at the intersection of creativity and commercial discipline. A hospitality brand creator and operations strategist, he is known for transforming strong ideas into scalable, profitable businesses without losing the soul of the brand.

Amit began his journey with a Diploma in Hotel Management & Catering Technology from Rizvi College of Hotel Management, Mumbai, later strengthening his business understanding through a correspondence course in Sales & Marketing from the University of Cambridge. He started his career in international hospitality environments, gaining early operational experience with global brands such as Jumeirah International and Hyatt Regency. Those formative years shaped his structured, systems-driven approach to hospitality.

Over the next two decades, Amit went on to play leadership roles across some of India’s most influential F&B groups. His tenure at Impresario Entertainment & Hospitality marked a defining chapter, where he helped scale and shape disruptive, culture-forward brands like SOCIAL and AntiSocial across multiple cities. He also led the fine-dining division, overseeing brands such as Smoke House Deli, Salt Water Grill, and The Tasting Room.

At JSM Corporation, he managed flagship brands including Asilo, Hard Rock Cafe, Shiro, and California Pizza Kitchen, leading large, multi-city operations. His experience further spans Mirah Hospitality, Ramee Group of Hotels, Shott Amusement Limited, and entrepreneurial ventures of his own – giving him exposure to formats ranging from luxury dining to entertainment-led destinations.

Amit is particularly known for:

  • Building category-defining brands from the ground up
  • Turning businesses from “red to green” through disciplined MIS and cost control
  • Creating franchise-ready, replicable operating models
  • Leading pan-India operations with strong team alignment
  • Balancing brand storytelling with commercial viability

As Chief Operating Officer, he oversees end-to-end operations, P&L performance, scalability, franchise readiness, guest experience, and expansion strategy. His leadership style is grounded and people-first, with a sharp focus on execution. He believes great hospitality lies in consistency, in systems that allow creativity to flourish without compromising margins.

For Amit, scalability comes down to clarity: a strong brand identity, repeatable operations, standardised supply chains, and a clear customer proposition. He advocates a hybrid expansion model, owned outlets to preserve innovation and control, franchises for scale, and strategic partnerships for capital efficiency.

On the industry at large, he sees Indian F&B as high-growth but unforgiving, where differentiation and operational rigour determine survival. He believes young restaurateurs often overinvest in aesthetics and underinvest in systems and unit economics, a mistake he consciously avoids.

Outside the boardroom and restaurant floor, Amit is an avid biker and a music enthusiast; interests that mirror his professional philosophy: freedom within structure.
